Fromage Blanc Cheesecake Recipe

Ingredients:

  1. 1 1/2 cups graham cracker crumbs

  2. 1/4 cup unsalted butter, melted

  3. 16 oz fresh farmstead fromage blanc

  4. 3/4 cup granulated sugar

  5. 3 large eggs

  6. 1 tsp vanilla extract

  7. Zest of 1 lemon

  8. 2 tbsp lemon juice

  9. Fresh berries for topping (e.g., strawberries, blueberries, raspberries)

Instructions:

  1. Preheat your oven to 325°F (163°C).

  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9-inch (23 cm) springform pan to create the crust. Set aside.

  3. In a separate bowl, beat the fresh farmstead fromage blanc and granulated sugar until smooth.

  4. Add the eggs one at a time, mixing well after each addition.

  5. Stir in the vanilla extract, lemon zest, and lemon juice, and mix until the batter is well combined.

  6. Pour the cheesecake batter over the graham cracker crust in the springform pan.

  7. Bake in the preheated oven for about 45-50 minutes or until the edges are set but the center is slightly jiggly.

  8. Allow the cheesecake to cool at room temperature, then refrigerate it for at least 4 hours or overnight.

  9. Before serving, top the cheesecake with fresh berries of your choice.
