Fresh Feta Cheese Salad
200g Achadinha feta cheese, cubed
2 cups mixed salad greens (lettuce, spinach, arugula, etc.)
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and halved
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Start by preparing all your vegetables. Wash the salad greens, cherry tomatoes, cucumber, and red onion thoroughly. Pat them dry with a paper towel.
In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives. Toss gently to mix the ingredients evenly.
Now, add the cubed feta cheese on top of the salad mixture.
In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, dried oregano, salt, and pepper. This will be your dressing.
